Strict selection of grapes harvested very late, blessed with a layer of noble rot (Botrytis). The grapes are picked almost individually and must contain between 110 and 128 Oechsle. The fermentation is stopped earlier so that more residual sugar remains and the wine contains less alcohol than with a classic fermentation. After aging in wooden barrels, it is bottled in the typical Bocksbeutel.
